Mushroom and Cheddar Starter

This recipe was supplied by Crystal - Barmaid at the Ostrich
Ingredients 2 1/2oz (65g) Butter.
1 Onion, skinned and chopped.
1 clove of Garlic, skinned and crushed.
8oz (225g) Mushrooms, thickly sliced.
1oz (25g) Flour.
1/2 pint (250ml) milk.
Pepper and salt.
2oz (50g) Cheddar Cheese, grated.
1 tablespoon Single Cream.  

Equipment 1 Frying Pan
1 Plastic Jug.
4 Ramekin dishes  

Method 1. Melt 1 1/2oz butter in a frying pan.
2. Fry the onion, garlic and mushrooms until tender.
3. Heat the butter, flour and milk, in a plastic jug in the microwave then stir until thick.
4. When thick add salt and pepper to taste, half the cheese, and the cream.
5. Mix the mushroom mixture into the sauce.
6. Divide between 4 Ramekin dishes, and sprinkle the remaining cheese on top.
7. Bake in the oven at 190C (375F) for 15 minutes.  

Serve hot (should be garnished with parsley)
