Crystals Cheesecake
If we have guests to dinner, I get my daughter to make this for dessert - she's so good at it.
This is one of Crystal's Recipes
Ingredients 6oz (180g) Digestive Biscuits
3oz (90g) Margerine or Butter
1 x 125g Pack of Philadelphia Cream Cheese
1 x 125g Pot of Yoghurt (Flavour of your choice)
1 x 125g Pot of Whipping or Double Cream  

Equipment 7 1/2inch Flan Dish
2 Mixing Bowls  

Method 1. Crush the digestive biscuits into fine crumbs.
2. Melt the butter or marg, then add the biscuit crumbs to it. Press this mixture evenly onto the sides and bottom of a 7 1/2inch Flan Dish, then place into the fridge to set.
3. Put the yoghurt and cream cheese into a mixing bowl and carefully whisk them together until they form a smooth mixture.
4. In a separate bowl, whisk the cream until it thickens, and forms peaks.
5. Fold the cream into the yoghurt and cream cheese mixture.
6. Place the mixture into the flan case and put into the fridge to set and chill.  

Place in fridge at least 2 - 3 hours before serving, or if you wish to get ahead, it can be made the day before.
Before serving, decorate the top if desired with chocolate curls, shapes etc., and or slices of kiwi, or other appropriate fruit.
