8 fairly large mushrooms with stalks
3 large tomatoes, skinned and chopped
1 small grated onion
1oz butter, and some for dotting.
1 tablespoon of chopped parsley
Salt and pepper to season
1). Preheat oven to 375F/190C/Gas mark 4-5.
2). Clean the mushrooms if necessary and remove the stalks.
3). Chop the stalks up and mix with the skinned chopped
tomatoes and grated onion, the 1oz butter, chopped
parsley and the seasoning.
4). Put the mushrooms on a large greased oven-proof dish. Top
each mushroom with the stuffing and dot the top of
each with a little butter.
